Ingredients

  • 6 tablespoons unsalted butter
  • 1 package (10 ounces) mini marshmallows (about 4 cups)
  • 6 cups Rice Krispies cereal
  • 1/4 teaspoon salt (optional)
  • 1 teaspoon vanilla extract
  • 1/2 cup white candy melts
  • 1/2 cup brown candy melts (optional)
  • 1 tablespoon coconut oil or shortening

Instructions

  1. Line a 9×13 inch baking pan with parchment paper, leaving overhang on the sides. Lightly spray with non-stick cooking spray.
  2. In a large pot, melt the butter over medium-low heat, swirling occasionally.
  3. Add the mini marshmallows and stir constantly with a silicone spatula until completely melted and smooth, about 3-4 minutes.
  4. Remove from heat. Stir in salt and vanilla extract. Let the mixture sit for about 60 seconds.
  5. Pour in the Rice Krispies cereal and fold gently until every piece is coated. Do not overmix.
  6. Transfer the mixture to the prepared pan. Use a piece of parchment paper on top and press gently until even. Do not press too hard.
  7. Let the slab cool at room temperature for at least 30 minutes until completely firm.
  8. Lift the slab out using the parchment overhang. Place on a cutting board. Use a football-shaped cookie cutter to press out shapes, or cut into 3×2 inch rectangles and round the corners with a knife. You should get about 12-15 footballs.
  9. In a small microwave-safe bowl, melt the white candy melts according to package directions (30-second intervals, stirring in between). Add a teaspoon of coconut oil or shortening if too thick.
  10. Transfer the melted candy to a piping bag or small zip-top bag with the corner snipped off. Pipe a straight line down the center of each football, then add small perpendicular lines for the laces. Let the candy set for about 10 minutes before serving.

Notes

For best texture, let the marshmallow mixture cool for 60 seconds before adding cereal. Press gently into the pan to avoid hard treats. Use fresh marshmallows for smooth melting. For gluten-free, use certified gluten-free puffed rice cereal. Candy melts can be colored to match team colors.
