Instructions

  1. Preheat your oven to 350°F (175°C). Place the rack in the center position. Line a 6-cup muffin tin with paper liners or grease each cup generously with butter or cooking spray.
  2. In a medium bowl, whisk together 1 cup all-purpose flour, 1/3 cup granulated sugar, 2 tablespoons light brown sugar, 1 teaspoon baking powder, 1/4 teaspoon baking soda, 1/4 teaspoon salt, 1 teaspoon pumpkin pie spice, and 1/2 teaspoon cinnamon until evenly distributed.
  3. In a large bowl, whisk together 1/2 cup pumpkin puree, 1/4 cup vegetable oil, 1 large egg, 2 tablespoons milk, and 1 teaspoon vanilla extract until smooth and fully combined.
  4. Pour the dry ingredients into the wet ingredients. Use a rubber spatula to fold them together gently until just combined. A few small lumps are fine. Do not overmix.
  5. Add 1/3 cup semi-sweet chocolate chips to the batter and fold in with a few strokes until evenly distributed.
  6. Divide the batter evenly among the 6 muffin cups, filling each about three-quarters full.
