  • 1/3 cup honey
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons ketchup
  • 45 cloves garlic, minced
  • 1 tablespoon sriracha (or to taste)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • Sliced green onions, for garnish
  • Sesame seeds, for garnish

Instructions

  1. In a small mixing bowl, whisk together honey, soy sauce, ketchup, minced garlic, sriracha, and rice vinegar until smooth.
  2. Place chicken thighs in a single layer at the bottom of a 4- to 6-quart slow cooker. Pour the sauce evenly over the chicken, gently coating each piece.
  3. Cook on low for 4-5 hours or on high for 2-3 hours. Flip the chicken halfway through cooking for even coating.
  4. About 15 minutes before serving, whisk cornstarch with cold water in a small bowl to make a slurry. Remove chicken to a plate using tongs.
  5. Pour the cooking liquid into a small saucepan (or use the slow cooker’s sauté function). Whisk in the cornstarch slurry and bring to a simmer over medium heat, stirring constantly, until thickened (about 3-4 minutes).
  6. Return chicken to the slow cooker and gently toss to coat with the thickened sauce. Let sit for 2-3 minutes.
  7. Drizzle with sesame oil, garnish with green onions and sesame seeds, and serve immediately over rice, noodles, or steamed vegetables.

Notes

For a gluten-free version, use tamari or coconut aminos instead of soy sauce. If using chicken breasts, reduce cooking time to 2-3 hours on low. Pat chicken dry before adding to prevent watery sauce. Toast sesame seeds for extra flavor.
