Description

Tender, saucy chicken and perfectly crisp broccoli in a sticky honey garlic sauce, all made effortlessly in the slow cooker. This family-friendly weeknight dinner is simple, flavorful, and ready with minimal hands-on time.

  • 1.5 to 2 pounds boneless, skinless chicken breasts or thighs
  • 1/3 cup honey
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup chicken broth
  • 45 cloves garlic, minced (about 1 tablespoon)
  • 1 tablespoon rice vinegar
  • 1 teaspoon toasted sesame oil
  • 1/2 teaspoon ground ginger
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • 3 cups fresh broccoli florets (about 1 large head)
  • Sesame seeds and sliced green onions for garnish (optional)

Instructions

  1. In a small bowl, whisk together honey, soy sauce, chicken broth, minced garlic, rice vinegar, toasted sesame oil, and ground ginger until well combined.
  2. Pat chicken dry with paper towels and trim excess fat. Place chicken in a single layer in a 4-6 quart slow cooker.
  3. Pour the sauce evenly over the chicken, ensuring each piece is coated.
  4. Cover and cook on LOW for 3-4 hours or on HIGH for 1.5-2.5 hours, until chicken reaches an internal temperature of 165°F and shreds easily.
  5. Carefully remove chicken from slow cooker and shred with two forks (or leave whole). Set aside.
  6. In a small bowl, whisk cornstarch and cold water until smooth. Turn slow cooker to HIGH and stir in the slurry. Cook for 3-5 minutes, stirring occasionally, until sauce thickens and turns glossy.
  7. Return shredded chicken to the slow cooker. Add broccoli florets and gently stir to coat.
  8. Cover and cook on HIGH for 15-20 minutes, until broccoli is bright green and tender-crisp.
  9. Serve immediately over rice, noodles, or cauliflower rice. Garnish with sesame seeds and green onions if desired.

Notes

For best results, use low-sodium soy sauce to control saltiness. Add broccoli only at the end to keep it crisp. Chicken thighs are more forgiving than breasts. To make gluten-free, substitute tamari or coconut aminos for soy sauce.
