  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine halved baby potatoes, bell pepper strips, and red onion wedges. Toss with 1 ½ tablespoons olive oil, minced garlic, smoked paprika, dried oregano, salt, and pepper until evenly coated.
  3. Slice the kielbasa into ½-inch rounds and add to the bowl with the veggies. Toss gently to season without breaking the sausage pieces.
  4. Spread the mixture out in a single layer on a parchment-lined rimmed sheet pan, ensuring pieces have space to roast rather than steam.
  5. Roast in the oven for 20 minutes. Then flip the kielbasa and veggies using tongs or a spatula to promote even browning.
  6. Continue roasting for another 10-15 minutes until potatoes are tender and kielbasa edges are crisp and caramelized.
  7. Sprinkle chopped fresh parsley over the top and serve hot directly from the pan.

Do not overcrowd the pan to ensure crispiness. Flip halfway through roasting for even caramelization. Use small, firm potatoes and cut evenly for uniform cooking. Fresh garlic can brown quickly; consider adding halfway through roasting or use garlic powder to avoid bitterness. Parboiling potatoes for 5 minutes can reduce cook time but may affect texture.
