Ingredients

  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • ¼ cup (50 g) granulated sugar
  • 2 tbsp (28 g) unsalted butter, melted
  • ⅓ cup (80 ml) warm whole milk
  • 1 tsp vanilla extract
  • 1 tbsp cinnamon
  • ⅓ cup (65 g) extra granulated sugar
  • 23 tbsp vegetable oil

Instructions

  1. In a large bowl, whisk together 1 cup all-purpose flour, 1 ½ tsp baking powder, ¼ tsp salt, and ¼ cup granulated sugar.
  2. In a separate small bowl, stir together 2 tbsp melted unsalted butter, ⅓ cup warm whole milk, and 1 tsp vanilla extract.
  3. Pour the wet mixture into the dry ingredients and fold with a spatula until a sticky dough forms. Add more flour 1 tbsp at a time if too loose.
  4. Preheat a non-stick or cast iron skillet over medium heat and add 2–3 tbsp vegetable oil, swirling to coat evenly.
  5. Mix 1 tbsp cinnamon with ⅓ cup extra granulated sugar in a small bowl for the coating.
  6. Drop spoonfuls (about 1 tbsp each) of dough into the hot skillet, leaving space between pieces. Cook 2–3 minutes per side until golden brown and crispy.
  7. Use a slotted spoon to transfer bites to a paper towel-lined plate to drain excess oil.
  8. While still warm, toss the bites gently in the cinnamon sugar mixture until evenly coated.
  9. Serve warm immediately, optionally with dipping sauces like chocolate or caramel.

Notes

Keep the dough sticky but not runny to maintain shape and avoid greasiness. Control skillet heat carefully (medium to medium-low) to prevent burning. Do not overcrowd the skillet to keep oil temperature consistent. Reheat leftovers in a dry skillet to restore crispiness; avoid microwaving.
