Ingredients
- 1 large head cauliflower (cut into bite-sized florets, about 4–5 cups)
- 1 cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¾ cup milk (any kind works)
- ½ cup hot sauce (like Frank’s RedHot)
- 3 tablespoons unsalted butter, melted

Instructions
- Preheat your oven to 450°F (230°C). Line a large baking sheet with parchment paper or a silicone mat. If using a wire rack, place it on the sheet now.
- Prepare the cauliflower: Cut the head into bite-sized florets, about 1 to 1.5 inches each. Rinse and pat very dry with a clean kitchen towel.
- Set up your dredging station: In one shallow bowl, whisk together the flour, garlic powder, onion powder, smoked paprika, salt, and pepper. In a second shallow bowl, pour the milk.
- Coat the cauliflower: Working with a few florets at a time, toss them in the seasoned flour until lightly coated. Shake off excess. Dip each floret into the milk, letting excess drip off. Return to the flour mixture and toss again, pressing the flour gently onto the surface. Place coated florets on the prepared baking sheet in a single layer.
- Bake for 20 minutes: Bake for 10 minutes, then carefully flip each floret using tongs. Bake for another 8-10 minutes, until golden brown and crispy on the edges.
- Make the buffalo sauce: While the cauliflower bakes, combine the hot sauce and melted butter in a small saucepan over low heat. Whisk until smooth and warmed through. Alternatively, microwave together for 30 seconds, then stir.
- Toss with sauce: Transfer the baked florets to a large bowl. Pour the warm buffalo sauce over the top and toss gently until every piece is evenly coated.
- Serve immediately: Transfer to a serving platter and serve with ranch or blue cheese dressing, celery sticks, and carrot sticks on the side.
Notes
Dry the cauliflower thoroughly to ensure crispiness. Don’t overcrowd the baking sheet. For extra crispy bottoms, use a wire rack. Double the recipe for a crowd. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days; reheat in a 375°F oven for 5-7 minutes.
