Description

  • 1 sheet frozen puff pastry, thawed
  • 4 ounces brie cheese, rind removed and cut into 24 small cubes (about ½-inch each)
  • ⅓ cup whole berry cranberry sauce
  • 1 large egg, beaten with 1 tablespoon water for egg wash
  • Fresh thyme leaves for garnish (optional)
  • Flaky sea salt for finishing

Instructions

  1. Preheat your oven to 400°F (200°C). Position the rack in the center of the oven. Lightly spray your mini muffin tin with non-stick cooking spray.
  2. On a lightly floured surface, unfold your thawed puff pastry sheet. Gently roll it out just enough to smooth the creases, about ⅛-inch thick. Using a sharp knife or pizza cutter, cut the pastry into 24 equal squares, roughly 2 inches each.
  3. Gently press each square into a cup of the mini muffin tin, making sure the corners stick up slightly. If the pastry feels too warm and sticky, pop the tin in the refrigerator for 5 minutes to firm it up.
  4. Cut the rind off your brie cheese. Cut the remaining cheese into 24 cubes, each about ½ inch.
  5. Place one cube of brie into each pastry cup. Top each with about ½ teaspoon of cranberry sauce.
  6. In a small bowl, beat the egg with 1 tablespoon of water until well combined. Using a pastry brush, lightly brush the exposed edges of the pastry with the egg wash.
  7. Place the muffin tin in the preheated oven and bake for 12-15 minutes, until the pastry is puffed and golden brown and the brie is melted and bubbly.
  8. Let the bites cool in the pan for 2-3 minutes. Then, carefully transfer them to a serving platter. Sprinkle with fresh thyme leaves and a pinch of flaky sea salt while they’re still warm. Serve immediately.

Notes

Keep the pastry cold for best puffing. Don’t overfill the cups to prevent leaking. Let bites rest 2-3 minutes before serving to allow cheese to set. Can be assembled up to 24 hours in advance and refrigerated (without egg wash).
