Description

  • 1 sheet frozen puff pastry, thawed but still cold
  • 6 ounces brie cheese, rind removed and cut into 24 small cubes (about 1/2-inch each)
  • 1/4 cup cranberry sauce (homemade or canned; whole berry preferred)
  • 1 large egg, beaten with 1 tablespoon water (for egg wash)
  • Fresh rosemary or thyme for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a 24-cup mini muffin tin with butter or non-stick spray.
  2. On a lightly floured surface, gently roll out the thawed puff pastry sheet to about 1/8-inch thickness. Use a 2-inch round cutter to cut 24 circles. If the pastry gets warm, chill for 5 minutes.
  3. Gently press each pastry circle into a mini muffin cup, forming a cup shape that reaches the bottom and comes up the sides slightly. Do not stretch the dough.
  4. Cut the brie into 24 small cubes, about 1/2-inch each. If the brie is too soft, freeze for 10 minutes for easier cutting.
  5. Place one cube of brie into each pastry cup. Top each with about 1/2 teaspoon of cranberry sauce.
  6. In a small bowl, beat the egg with 1 tablespoon of water. Lightly brush the edges of each pastry cup with the egg wash, being careful not to drip into the cups.
  7. Place the muffin tin on a baking sheet and bake for 12-15 minutes, until the pastry is puffed and golden brown and the brie is melted and bubbly.
  8. Let the bites cool in the pan for 2-3 minutes. Use a small spoon or offset spatula to gently lift each bite out of the pan and transfer to a serving platter.
  9. Sprinkle with fresh chopped rosemary or thyme if desired. Serve warm.

Notes

Keep puff pastry cold for best flakiness. Do not overfill the cups. Let bites rest 2-3 minutes before removing from pan. Can be assembled up to 4 hours ahead and refrigerated; add 1-2 minutes to bake time. For air fryer: cook at 375°F for 6-8 minutes. For gluten-free, use gluten-free puff pastry. For variations, try fig jam, pepper jelly, or caramelized onions instead of cranberry sauce.
