  • 1 medium apple (Honeycrisp, Fuji, Gala, or Pink Lady)
  • 2 large flour tortillas (10-inch)
  • 2 tablespoons unsalted butter, softened
  • 1 tablespoon granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon brown sugar (optional)
  • Pinch of salt (optional)

Instructions

  1. Core the apple and slice thinly (about 1/8 inch thick). You should have about 1 cup of slices.
  2. In a small bowl, mix the granulated sugar and cinnamon. Add brown sugar if using.
  3. Spread about 1/2 tablespoon of softened butter on one side of each tortilla, leaving a 1/2-inch border.
  4. Place one tortilla butter-side down in a cold skillet. Arrange apple slices on half of the tortilla, then sprinkle with half the cinnamon sugar mixture. Fold the other half over to create a half-moon shape.
  5. Turn heat to medium. Cook for 2-3 minutes until the bottom is golden brown and crispy.
  6. Carefully flip the quesadilla and cook for another 2-3 minutes until the second side is golden and the apples are tender.
  7. Transfer to a cutting board and let rest for 30 seconds. Cut into 4 or 6 wedges using a pizza cutter or sharp knife.
  8. Serve immediately. Optionally, top with caramel sauce, vanilla ice cream, or a dusting of powdered sugar.

Notes

For best results, use room temperature butter for even spreading. Don’t overcrowd the skillet—cook one quesadilla at a time. Let the quesadilla rest before cutting to prevent the filling from sliding out. For a dairy-free version, use vegan butter or coconut oil. For a gluten-free version, use gluten-free tortillas.
