A quick and easy low-carb cheeseburger casserole without pasta, featuring seasoned ground beef, melted cheddar, and tangy pickles. Perfect for busy weeknights, this comforting dish delivers classic diner flavor without the carb coma.
Ingredients
- 1 ½ pounds (680 g) ground beef (80/20 recommended)
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- ½ cup (75 g) dill pickles, chopped
- 2 tablespoons yellow mustard
- 3 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 2 cups (200 g) sharp cheddar cheese, shredded
- 2 large eggs
- ½ cup (120 ml) heavy cream
- Salt and black pepper to taste
- Optional toppings: chopped lettuce, diced tomatoes, sliced avocado, extra pickles
Instructions
- Preheat your oven to 375°F (190°C). Grease an 8×8-inch baking dish with butter or non-stick spray.
- Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a wooden spoon, until browned and no longer pink (6-8 minutes). Leave about 1 tablespoon of fat in the skillet.
- Add the diced onion and minced garlic to the skillet. Cook for 3-4 minutes until the onion is soft and translucent.
- Stir in the chopped dill pickles, yellow mustard, tomato paste, and Worcestershire sauce. Cook for 2 minutes. Season with salt and pepper to taste.
- In a small mixing bowl, whisk together the eggs and heavy cream until smooth.
- Pour the egg mixture over the beef mixture in the skillet. Stir well to combine. If your skillet is not oven-safe, transfer the mixture to the greased baking dish.
- Sprinkle the shredded cheddar cheese evenly over the top.
- Bake for 18-22 minutes, until the cheese is melted and bubbly and the edges are slightly golden. If desired, reserve some cheese to add halfway through baking.
- Remove from the oven and let rest for 5 minutes before serving.
- Serve warm, topped with optional burger fixings like chopped lettuce, diced tomatoes, sliced avocado, or extra pickles.
Notes
Don’t over-brown the garlic. Use room-temperature eggs for a smoother mixture. Shred your own cheese for better melting. Let the casserole rest for 5 minutes after baking to allow the eggs to set. For a keto version, substitute heavy cream with 4 ounces of softened cream cheese. To make it dairy-free, use dairy-free cheese and full-fat coconut milk.
