Description
This candy corn popcorn bark is a ridiculously easy, 10-minute treat that uses simple ingredients and requires zero baking skills. It’s the perfect last-minute dessert for busy weeknights, Halloween parties, or whenever a sweet craving strikes.
Ingredients
- 8 cups popped popcorn (about 1/2 cup unpopped kernels)
- 12 ounces white chocolate melting wafers or white chocolate chips
- 1 1/2 cups candy corn
- 1/2 cup salted peanuts (optional but highly recommended)
- Flaky sea salt for finishing (optional but don’t skip it)
Instructions
- Prep your popcorn: Pop your popcorn however you normally do. Spread the popped popcorn on the baking sheet and pick out any unpopped kernels. Let the popcorn cool completely while you get everything else ready.
- Line your baking sheet: Cover your baking sheet with parchment paper or a silicone mat, making sure it extends up the sides a little bit.
- Melt the white chocolate: Place your white chocolate wafers or chips in a microwave-safe bowl. Microwave in 30-second intervals, stirring well between each, until smooth and fully melted (about 1-2 minutes total).
- Combine the popcorn and chocolate: Pour the melted white chocolate over your cooled popcorn in a large mixing bowl. Use a spatula to gently fold everything together until every piece of popcorn is coated.
- Add the mix-ins: Add the candy corn and peanuts (if using) to the chocolate-coated popcorn. Fold gently until evenly distributed. Save a handful of candy corn to press into the top later for visual appeal.
- Spread onto the baking sheet: Transfer the mixture to your prepared baking sheet. Spread it into an even layer, about 1/2 to 3/4 inch thick. If you saved some candy corn, press those pieces into the top now.
- Add the finishing salt: While the chocolate is still wet, sprinkle a light dusting of flaky sea salt over the top.
- Let it set: Let the bark sit at room temperature until completely set (30-45 minutes). If in a hurry, refrigerate for 15-20 minutes.
- Break into pieces: Once set, lift the parchment paper off the baking sheet. Break the bark into irregular pieces with your hands, aiming for pieces about 2-3 inches across.
Notes
Slightly stale popcorn works better as it doesn’t get chewy as fast. Add a teaspoon of coconut oil to white chocolate to keep it smooth. For a dairy-free version, use dairy-free white chocolate chips. Store in an airtight container at room temperature for up to 5-7 days. Can be frozen for up to 3 months.
