Description
These easy baked apple cider donuts are made with reduced apple cider for intense flavor, coated in a crunchy cinnamon sugar topping. Ready in under 30 minutes, they are the perfect fall treat without the fuss of frying.
Ingredients
- 1 cup apple cider (reduced to 1/3 cup)
- 1 3/4 cups all-purpose flour
- 3/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted and slightly cooled
- 1 large egg, room temperature
- 1 teaspoon vanilla extract
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon ground cloves
- For the cinnamon sugar coating:
- 1/2 cup granulated sugar
- 1 1/2 tablespoons ground cinnamon
- 4 tablespoons unsalted butter, melted
Instructions
- Reduce the apple cider: Pour 1 cup of apple cider into a small saucepan and bring to a boil over medium-high heat. Reduce heat to medium-low and simmer, stirring occasionally, until reduced to about 1/3 cup (10-12 minutes). Set aside to cool.
- Preheat oven to 350°F. Lightly grease a standard donut pan with nonstick spray or melted butter.
- In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
- In a separate medium bowl, whisk together 3/4 cup sugar and 6 tablespoons melted butter until smooth. Add egg and vanilla, whisk until combined. Whisk in cooled reduced apple cider.
- Pour wet mixture into dry ingredients and stir with a rubber spatula until just combined (a few streaks of flour are okay). Do not overmix.
- Transfer batter to a piping bag or large zip-top bag with corner snipped. Pipe batter into donut wells, filling each about 2/3 full.
- Bake for 10-12 minutes, until golden brown and a toothpick inserted comes out clean. Let cool in pan for exactly 2 minutes.
- While donuts bake, mix 1/2 cup sugar and 1 1/2 tablespoons cinnamon in a shallow bowl. Melt 4 tablespoons butter in a separate bowl.
- After 2 minutes, turn donuts out onto a cooling rack. While still warm, brush each donut generously with melted butter, then dip into cinnamon sugar mixture, coating all sides. Place back on rack to set.
- Repeat with remaining batter if baking in batches. Best served same day, preferably slightly warm.
Notes
Do not skip reducing the apple cider—it concentrates flavor and removes excess liquid. Let donuts cool in pan for exactly 2 minutes for easy release. Brush butter on warm donuts, do not dip, to avoid greasiness. For extra crunchy coating, double the cinnamon sugar mixture. Store leftovers in an airtight container at room temperature for up to 2 days; coating will soften. Freeze uncoated baked donuts for up to 2 months.
