These Easy Apple Cinnamon Baked Oatmeal Cups are a healthy, make-ahead breakfast that tastes like fall in a muffin cup. Made with simple ingredients like rolled oats, fresh apples, and warm cinnamon, they’re perfect for busy mornings and meal prep.
Ingredients
- 2 cups (180g) rolled oats
- 1 large apple (about 200g), grated
- 1 cup (240ml) milk (any kind)
- 2 large eggs
- 1/3 cup (80ml) pure maple syrup
- 3 tablespoons (42g) coconut oil or unsalted butter, melted and slightly cooled
- 1 teaspoon vanilla extract
- 1 1/2 teaspoons cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- Optional: 1/4 cup (30g) chopped walnuts or pecans
- Optional: 1/4 cup (40g) dried cranberries or raisins
- Optional: coarse sugar for sprinkling
Instructions
- Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin well with butter or cooking spray, or line with paper liners.
- Grate the apple (unpeeled) on the large holes of a box grater. Squeeze out some excess liquid using a clean kitchen towel or paper towels, but not all of it. Set aside.
- In a large bowl, combine rolled oats, cinnamon, baking powder, and salt. Whisk together. If adding nuts or dried fruit, stir them in now.
- In a medium bowl or large liquid measuring cup, whisk together milk, eggs, maple syrup, melted coconut oil (or butter), and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients. Add the grated apple. Stir with a rubber spatula until everything is evenly moistened and no dry patches remain. Do not overmix.
- Let the batter rest for 5 minutes to allow the oats to absorb some liquid.
- Divide the batter evenly among the 12 muffin cups, filling them almost to the top. If desired, sprinkle coarse sugar or a pinch of cinnamon on top.
- Bake for 18-22 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
- Let the cups cool in the muffin tin for 5 minutes, then transfer to a wire rack to cool completely.
- Serve warm, at room temperature, or chilled.
Notes
Don’t skip the resting step—it helps the cups hold together. Grate the apple, don’t chop it, for even moisture distribution. Check your oven temperature; start checking at 16 minutes if your oven runs hot. Use room temperature eggs to prevent coconut oil from solidifying. Line your muffin tin well to prevent sticking. These freeze beautifully for up to 3 months.
