Ingredients

  • 3 tablespoons sunflower seed butter
  • 1 cup gluten-free pretzels
  • 1/2 cup freeze-dried strawberries
  • 1/4 cup pumpkin seeds (pepitas)
  • 1/2 cup diced mango pieces (freeze-dried or dried, no added sulfur or sugar)
  • 2 tablespoons dark chocolate chips (dairy-free, allergen-free)
  • 2 tablespoons unsweetened coconut flakes
  • 2 small rice cakes (plain or lightly salted)

Instructions

  1. Scoop 3 tablespoons of sunflower seed butter into a small silicone muffin cup or leak-proof mini container. If thick, microwave for 10 seconds to soften. Place in the largest compartment of a bento box.
  2. Arrange 1 cup of gluten-free pretzels in a single layer in the next compartment. Break in half if needed to fit.
  3. Sprinkle 1/4 cup of pumpkin seeds into a separate compartment or nestle next to the pretzels.
  4. Gently add 1/2 cup of freeze-dried strawberries to another compartment. Handle carefully to avoid crumbling.
  5. Place 1/2 cup of diced mango pieces next to the strawberries. Separate any stuck pieces with fingers.
  6. Sprinkle 2 tablespoons of dark chocolate chips and 2 tablespoons of coconut flakes into remaining spaces. Place chocolate chips in a small corner.
  7. Pack 2 small rice cakes separately in a baggie or on top of the box lid to keep them dry until snack time.
  8. Close the box. If prepping ahead, store dry ingredients separately from sunflower butter and assemble in the morning. Refrigerate only if needed; box is shelf-stable for a few hours.

Notes

Keep sunflower seed butter separate from dry ingredients until snack time to prevent sogginess. Check labels for certified allergen-free products (e.g., Enjoy Life, MadeGood). For coconut allergies, omit coconut flakes and add extra freeze-dried fruit or chocolate chips. Let kids help assemble for ownership and fun.
