These air fryer pumpkin spice donuts are soft, tender, and perfectly spiced, ready in under 20 minutes. No deep frying, no complicated steps—just a quick mix and the air fryer does the work for a cozy fall treat.

- 1 ½ cups (180g) all-purpose flour
- ½ cup (100g) granulated sugar
- ½ cup (120g) pumpkin puree (100% pure, not pumpkin pie filling)
- 1 large egg, room temperature
- ¼ cup (60ml) milk (whole or 2%)
- 2 tablespoons (28g) unsalted butter, melted and cooled slightly
- 1 teaspoon vanilla extract
- 1 ½ teaspoons baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 ½ teaspoons pumpkin pie spice
- ½ teaspoon cinnamon
- For the cinnamon sugar coating:
- ½ cup (100g) granulated sugar
- 1 tablespoon (8g) cinnamon
- 3 tablespoons (42g) unsalted butter, melted
Instructions
- Preheat the air fryer to 350°F (175°C) for 3-5 minutes.
- In a medium bowl, whisk together flour, baking powder, baking soda, salt, pumpkin pie spice, and cinnamon.
- In a large bowl, whisk together sugar, pumpkin puree, egg, milk, melted butter, and vanilla extract until smooth.
- Pour dry ingredients into wet ingredients and fold with a spatula until just combined. Do not overmix.
- Lightly grease a donut mold with non-stick spray or melted butter.
- Transfer batter to a piping bag or zip-top bag with the corner snipped. Pipe batter into each donut cavity, filling ¾ full.
- Place the mold in the air fryer basket and cook at 350°F (175°C) for 6-8 minutes, until golden brown and a toothpick inserted comes out clean.
- Let donuts cool in the mold for 2 minutes, then transfer to a cooling rack. While still warm, brush each donut with melted butter on both sides and immediately dip or sprinkle with cinnamon sugar mixture.
- Repeat with remaining batter. Keep finished donuts warm in a 200°F (95°C) oven while cooking the rest.
Notes
For best results, use room-temperature ingredients. Do not overmix the batter. Check doneness at 6 minutes if your air fryer runs hot. Let donuts cool slightly before coating to prevent butter from running off. Store in an airtight container at room temperature for up to 2 days. Freeze for up to 3 months.
