Ingredients
- 1 cup (90g) rolled oats
- ½ cup (130g) creamy peanut butter
- ¼ cup (85g) honey
- ¼ cup (30g) chocolate protein powder
- ¼ cup (45g) mini chocolate chips
- Pinch of sea salt
- Optional: 2 tablespoons ground flaxseed or chia seeds
- Optional: 1 tablespoon cocoa powder
- Optional: ¼ cup shredded coconut
- Optional: 2 tablespoons mini M&Ms
Instructions
- Combine the dry ingredients: In a large mixing bowl, add 1 cup rolled oats, ¼ cup chocolate protein powder, and a pinch of sea salt. Whisk together to break up any clumps.
- Add the wet ingredients: Spoon in ½ cup creamy peanut butter and ¼ cup honey. Make sure the peanut butter is well-stirred.
- Mix until combined: Stir everything together with a rubber spatula or wooden spoon. Press the mixture against the sides of the bowl. After about 30 seconds, it should form a thick, cohesive dough. If too dry, add a teaspoon of honey or a splash of milk. If too sticky, add another tablespoon of oats.
- Fold in the chocolate chips: Add ¼ cup mini chocolate chips and fold them in gently until evenly distributed.
- Chill the mixture (optional but recommended): Cover the bowl and refrigerate for 15-20 minutes for easier handling.
- Roll into balls: Using a cookie scoop or tablespoon, scoop portions of dough and roll them between your palms gently. You should get about 14-16 balls, about 1 inch in size.
- Place on parchment: Line a baking sheet or plate with parchment paper and place the rolled balls on it.
- Enjoy immediately or refrigerate: These are ready to eat right away, but they firm up nicely after 30 minutes in the fridge.
Notes
For best texture, use room temperature peanut butter and honey. If dough is sticky, lightly wet your hands before rolling. Chilling the dough for 15-20 minutes makes rolling easier. These keep in the fridge for up to 2 weeks and freeze for up to 3 months.
