Description
This incredibly easy chili uses just five ingredients and a slow cooker for a set-it-and-forget-it meal that tastes like it simmered all day. Perfect for game day, it delivers bold, satisfying flavor with minimal effort.
Ingredients
Scale
- 2 lbs ground beef (80/20 recommended)
- 2 cans (15 oz each) chili beans, undrained
- 2 cans (10 oz each) diced tomatoes with green chiles, undrained
- 2 packets (1 oz each) chili seasoning mix
- 1 cup beef broth
Instructions
- Optional but recommended: Heat a large skillet over medium-high heat. Add ground beef and cook, breaking it up with a wooden spoon, until no longer pink (5-7 minutes). Drain excess fat.
- In a 6-quart slow cooker, add the cooked (or raw) ground beef. Pour in both cans of undrained chili beans, both cans of undrained diced tomatoes with green chiles, both packets of chili seasoning, and 1 cup of beef broth.
- Stir everything together until the chili seasoning is well incorporated. Scrape the bottom of the crockpot to prevent sticking.
- Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
- About 30 minutes before serving, stir the chili. If too thick, add a little extra beef broth or water. If too thin, leave the lid off for the last 30 minutes to let liquid evaporate.
- Taste and adjust seasoning as needed (add hot sauce, salt, etc.).
- Ladle into bowls and serve with desired toppings.
Notes
For best flavor, brown the ground beef first. Don’t drain the canned beans or tomatoes—the liquid helps thicken the chili. Chili tastes even better the next day. To thicken, mash some beans against the side of the pot or use a cornstarch slurry. For a spicier chili, use hot diced tomatoes with green chiles or add chopped jalapeños.
