Instructions

  1. Prep the chicken: Slice chicken breasts horizontally into thin cutlets. Season both sides generously with salt and black pepper.
  2. Heat the skillet: Place a large skillet over medium-high heat and add olive oil. Heat until shimmering, about 2 minutes.
  3. Sear the chicken: Lay cutlets in the skillet in a single layer (work in batches if needed). Cook undisturbed for 4-5 minutes until golden, then flip and cook another 3-4 minutes until internal temperature reaches 165°F. Transfer to a plate and tent with foil.
  4. Start the sauce base: Reduce heat to medium. Add butter to the skillet. Once melted, add minced garlic and chopped sun-dried tomatoes. Stir constantly for about 30 seconds until fragrant.
  5. Deglaze the pan: Pour in chicken broth and scrape up browned bits with a wooden spoon. Simmer for about 1 minute.
