- 3 cups rotisserie chicken, shredded
- 1 cup queso dip (e.g., Herdez Queso Dip or Velveeta Queso Blanco)
- 1 cup shredded Mexican blend cheese
- 12 (6-inch) flour tortillas
- 3 tablespoons butter, melted
- 1 tablespoon taco seasoning
- 4 ounces diced green chiles, drained
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil.
- Shred the rotisserie chicken into a large mixing bowl, discarding skin and bones. You should have about 3 cups.
- Add queso dip, shredded Mexican blend cheese, taco seasoning, and diced green chiles to the bowl. Stir until well combined. The mixture should be thick and creamy.
- Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds, or warming one by one in a dry skillet for about 10 seconds per side.
- Lay a warm tortilla on your work surface. Spoon about 2-3 tablespoons of the chicken mixture in a line down the center. Roll the tortilla tightly around the filling, like a cigar. Place seam-side down on the prepared baking sheet. Repeat with remaining tortillas and filling.
- Melt the butter in a small bowl. Using a pastry brush, lightly brush the top and sides of each taquito with melted butter.
- Bake for 18-22 minutes, or until golden brown and crispy. Halfway through, flip each taquito gently with tongs to ensure even crisping.
- Let the taquitos rest on the baking sheet for 2-3 minutes before transferring to a serving platter. Serve warm with your favorite dips.
Notes
Don’t skip flipping the taquitos halfway through baking to ensure even crispiness. If tortillas brown too quickly, tent loosely with foil for the last 5 minutes. For air fryer method, cook at 375°F for 8-10 minutes, flipping halfway.
