  • 1 pound smoked sausage (kielbasa or andouille), sliced into 1-inch pieces
  • 2 medium bell peppers (red, yellow, green), cut into chunks
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika (smoked paprika optional)
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon salt
  • Wooden skewers, soaked in water for 30 minutes

Instructions

  1. Slice the smoked sausage into roughly 1-inch pieces. Wash, core, and cut the bell peppers into chunks about the same size as the sausage.
  2. Soak wooden skewers in water for at least 30 minutes to prevent burning.
  3. In a large mixing bowl, combine sausage and pepper chunks. Drizzle with olive oil and sprinkle garlic powder, paprika, black pepper, and salt. Toss well to coat evenly.
  4. Thread sausage and peppers alternately onto the soaked skewers, leaving a little space between pieces for even cooking. Aim for 4-5 pieces of each per skewer.
  5. Preheat grill or grill pan to medium-high heat. Cook skewers for 5-7 minutes per side, turning carefully with tongs, until sausage is crispy and peppers are tender but vibrant. If using a skillet, cook over medium heat and turn frequently.
  6. Remove skewers from heat and let rest for 2 minutes before serving.

Notes

Soak wooden skewers to prevent burning. Cook sausage first if peppers soften too quickly. Use medium-high heat for crispy edges without drying out sausage. Reheat leftovers in skillet or oven to maintain crispness; avoid microwave.
