  • 4 to 5 slices thick-cut bacon, chopped into 1-inch pieces
  • 2 tablespoons pure maple syrup
  • 1 tablespoon olive oil
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon freshly ground black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • Balsamic glaze for drizzling (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or aluminum foil. If using foil, spray with nonstick cooking spray.
  2. Rinse Brussels sprouts under cold water and pat completely dry. Trim the tough ends and remove any yellow or loose outer leaves. Cut each sprout in half lengthwise through the stem; if large, cut into quarters.
  3. Place the sprouts in a large mixing bowl. Drizzle with olive oil, salt, and black pepper. Toss well to coat.
  4. Scatter the chopped bacon over the seasoned sprouts and toss again. Spread everything in a single layer on the prepared baking sheet, cut-side down as much as possible.
  5. Roast for 15 minutes. Remove the sheet and flip the sprouts and bacon using a spatula or tongs.
  6. Drizzle 2 tablespoons of maple syrup evenly over the sprouts and bacon. Toss quickly on the baking sheet and spread back into a single layer.
  7. Roast for another 8 to 10 minutes, until the sprouts are deep golden-brown and tender, and the bacon is crispy. Watch closely to prevent burning.
  8. Remove from the oven and let rest for 2 to 3 minutes. If using, sprinkle with red pepper flakes or drizzle with balsamic glaze. Serve immediately.

Notes

For extra-crispy sprouts, turn on the broiler for the last 1 to 2 minutes of cooking, watching carefully to prevent burning. Dry sprouts thoroughly before roasting to ensure crispiness. Do not overcrowd the pan; use two pans if needed. Add maple syrup halfway through roasting to prevent burning.
