Instructions

  1. Place whole potatoes in a large pot and cover with cold water. Add a pinch of salt. Bring to a boil and cook for 15-20 minutes until just tender (pierce with a fork to check). Drain and let sit in a colander for 5 minutes to steam dry.
  2. Transfer potatoes to a large mixing bowl. Using the bottom of a sturdy glass or potato masher, gently press down each potato to flatten to about ½ inch thick, keeping them intact.
  3. Drizzle olive oil over the crushed potatoes. Sprinkle salt, black pepper, garlic powder, and herbs evenly. Toss carefully to coat without breaking the potatoes further.
  4. Heat a heavy skillet or cast iron pan over medium-high heat for 2-3 minutes until hot. Add potatoes in a single layer without crowding.
  5. Cook undisturbed for 5-7 minutes until a deep golden-brown crust forms. If potatoes stick slightly, they are caramelizing.
  6. Carefully flip each potato using a spatula or tongs. Cook the other side for another 5 minutes until equally golden and crisp. Reduce heat if burning occurs.
  7. Optional: Add butter and let it melt, swirling to coat the potatoes. Serve immediately for best crunch.

Dry potatoes thoroughly after boiling to ensure crispness. Use medium-high heat and avoid overcrowding the pan. Flip potatoes carefully only once or twice to maintain crust.
