A quick and easy recipe for golden, crispy potatoes with a fluffy inside using a unique ‘crash’ technique that requires minimal prep and delivers maximum crunch.
Ingredients
- 2 pounds Yukon Gold or red potatoes (small to medium size)
- 3 tablespoons extra virgin olive oil
- 1½ teaspoons kosher or sea salt (adjust to taste)
- ½ teaspoon freshly ground black pepper
- 1 teaspoon garlic powder
- 1 tablespoon chopped fresh rosemary or thyme (optional)
- 1 tablespoon butter (optional)
Instructions
- Place whole potatoes in a large pot and cover with cold water. Add a pinch of salt. Bring to a boil and cook for 15-20 minutes until just tender (pierce with a fork to check). Drain and let sit in a colander for 5 minutes to steam dry.
- Transfer potatoes to a large mixing bowl. Using the bottom of a sturdy glass or potato masher, gently press down each potato to flatten to about ½ inch thick, keeping them intact.
- Drizzle olive oil over the crushed potatoes. Sprinkle salt, black pepper, garlic powder, and herbs evenly. Toss carefully to coat without breaking the potatoes further.
- Heat a heavy skillet or cast iron pan over medium-high heat for 2-3 minutes until hot. Add potatoes in a single layer without crowding.
- Cook undisturbed for 5-7 minutes until a deep golden-brown crust forms. If potatoes stick slightly, they are caramelizing.
- Carefully flip each potato using a spatula or tongs. Cook the other side for another 5 minutes until equally golden and crisp. Reduce heat if burning occurs.
- Optional: Add butter and let it melt, swirling to coat the potatoes. Serve immediately for best crunch.
Notes
Dry potatoes thoroughly after boiling to ensure crispness. Use medium-high heat and avoid overcrowding the pan. Flip potatoes carefully only once or twice to maintain crust. Butter is optional for finishing; omit for vegan/dairy-free option. For extra crispiness, finish in a 425°F oven for 10 minutes. Reheat leftovers in oven to restore crunch; avoid microwaving.
