  • 2 cups cooked chicken, shredded (rotisserie chicken works great)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup finely chopped onion
  • 1 garlic clove, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper, to taste
  • 1 tablespoon vegetable oil (for sautéing filling)
  • 1012 small flour tortillas
  • Vegetable oil, for frying (enough to shallow fry flautas)
  • 2 ripe avocados
  • 1/2 cup sour cream (or Greek yogurt)
  • 1 tablespoon freshly squeezed lime juice
  • 1 small garlic clove, minced
  • Salt, to taste
  • Fresh cilantro, chopped (optional)

Instructions

  1. Heat 1 tablespoon vegetable oil in a skillet over medium heat. Add chopped onion and sauté until translucent, about 3 minutes.
  2. Add minced garlic and cook for 30 seconds until fragrant.
  3. Add shredded chicken, ground cumin, chili powder, salt, and pepper. Cook for 5 minutes until warmed through and combined.
  4. Remove from heat and stir in shredded cheddar cheese until slightly melted.
  5. Warm tortillas slightly in microwave or on dry skillet for about 15 seconds each to make pliable.
  6. Place about 2 tablespoons of filling near one edge of a tortilla and roll tightly, tucking in sides. Secure with toothpick if needed.
  7. Pour vegetable oil into a heavy skillet to a depth of about 1/2 inch. Heat over medium-high until oil reaches 350°F (175°C).
  8. Fry flautas seam-side down in batches for 2-3 minutes per side until golden brown and crispy. Drain on paper towels.
  9. While frying, blend ripe avocados, sour cream, lime juice, minced garlic, and salt until smooth. Add water or milk if too thick.
  10. Serve flautas hot, drizzled or dolloped with avocado crema and garnished with chopped cilantro and a squeeze of lime.

Notes

Warm tortillas before rolling to prevent cracking. Maintain oil temperature around 350°F for best crispiness. Chill rolled flautas for 10 minutes before frying to hold shape. Baking alternative: bake at 425°F for 15-20 minutes, flipping halfway.
