Description

  • 2 large boneless, skinless chicken breasts (about 1 lb / 450 g), sliced into strips
  • 1 cup panko breadcrumbs
  • ½ cup all-purpose flour
  • 2 large eggs, beaten (room temperature)
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • Salt and freshly ground black pepper, to taste
  • Olive oil or vegetable oil, for frying
  • 2 cloves garlic, minced
  • 2 anchovy fillets, finely chopped
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • ½ cup mayonnaise
  • ¼ cup grated Parmesan cheese
  • Freshly ground black pepper, to taste
  • 4 large lavash flatbreads
  • 2 cups romaine lettuce, chopped
  • ½ cup cherry tomatoes, halved (optional)
  • Extra Parmesan cheese for sprinkling

Instructions

  1. Slice the chicken breasts into even strips about ½ inch thick. Season with salt, pepper, garlic powder, and smoked paprika. (10 minutes)
  2. Set up breading stations: one dish with flour, one with beaten eggs, and one with panko breadcrumbs.
  3. Dredge each chicken strip first in flour, shaking off excess, then dip into beaten eggs, and coat thoroughly in panko breadcrumbs. Press breadcrumbs firmly to stick. (10 minutes)
  4. Heat about 2 tablespoons of oil in a large skillet over medium heat. Cook chicken strips in a single layer for 3-4 minutes per side until golden brown and cooked through (internal temp 165°F/74°C). Drain on paper towels. (15 minutes)
  5. While chicken cooks, whisk together minced garlic, chopped anchovies, lemon juice, Dijon mustard, Worcestershire sauce, mayonnaise, and Parmesan cheese. Adjust seasoning with pepper and salt. (5 minutes)
  6. Warm lavash flatbreads slightly in a dry skillet or microwave for 15 seconds to make pliable. Spread a generous layer of the homemade Caesar dressing on each lavash.
  7. Layer chopped romaine lettuce, cherry tomatoes if using, and crispy chicken strips over the dressing. Sprinkle extra Parmesan cheese on top. Roll lavash tightly into wraps, folding edges to keep filling inside. (5 minutes)
  8. Cut wraps diagonally and serve immediately for best crunch and freshness.

Notes

For gluten-free, substitute almond flour and gluten-free panko breadcrumbs and use gluten-free lavash. For dairy-free, use plant-based mayonnaise and vegan Parmesan or omit cheese. Warm lavash gently to avoid cracking. Keep chicken warm in a low oven if assembling for a crowd. Baking chicken is possible but pan-frying yields best crispiness.
