  • 4 sturdy burger buns (brioche or potato buns recommended)

Instructions

  1. Heat 1 tablespoon butter over medium heat on the Blackstone or in a skillet. Add the thinly sliced onions and a pinch of salt. Stir occasionally and cook for about 15–20 minutes until deeply golden and soft, avoiding burning.
  2. Divide 1 pound ground beef into 4 equal portions (about 4 ounces each). Gently roll into loose balls without packing tightly.
  3. Preheat the Blackstone griddle to medium-high heat (around 375°F). Add 1 tablespoon oil and spread evenly.
  4. Place each beef ball on the hot griddle. Using a sturdy metal spatula or burger press, smash each ball down firmly to about ¼ inch thickness. Hold pressure for 10 seconds to create a crust. Season patties generously with salt and pepper.
  5. Cook the patties undisturbed for 2–3 minutes until edges are deeply browned and crispy.
  6. Flip the patties carefully. Add a slice of cheese if desired and cover loosely with a lid or foil to melt. Cook for another 1–2 minutes for medium doneness.
  7. Toast the buns cut side down on the griddle until golden and crisp, about 1 minute.
  8. Assemble the burgers by placing caramelized onions on the bottom bun, adding the patty with melted cheese, topping with fresh toppings if desired, and finishing with the top bun. Serve immediately.

Use freshly ground 80/20 beef for best flavor and crust. Handle meat gently to avoid dense patties. Smash hard and fast to create a crispy crust. Cook onions low and slow to caramelize without burning. Toast buns on the griddle for extra crunch. Keep spatula clean and dry for easy flipping.
