Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or foil, place a wire rack on top, and spray lightly with cooking spray.
- Pat pork chops dry with paper towels. Season both sides generously with salt, pepper, garlic powder, and onion powder.
- In a shallow bowl, whisk together eggs, Dijon mustard, and milk until smooth. In another shallow bowl, combine panko, Parmesan, Italian seasoning, smoked paprika, and cayenne (if using).
- Dip each pork chop into the egg mixture, letting excess drip off, then press firmly into the panko mixture, coating both sides. Place on the prepared wire rack.
