  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 2 large eggs, at room temperature
  • 2 tablespoons Dijon mustard
  • 2 tablespoons milk or buttermilk
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or foil, place a wire rack on top, and spray lightly with cooking spray.
  2. Pat pork chops dry with paper towels. Season both sides generously with salt, pepper, garlic powder, and onion powder.
  3. In a shallow bowl, whisk together eggs, Dijon mustard, and milk until smooth. In another shallow bowl, combine panko, Parmesan, Italian seasoning, smoked paprika, and cayenne (if using).
  4. Dip each pork chop into the egg mixture, letting excess drip off, then press firmly into the panko mixture, coating both sides. Place on the prepared wire rack.
  5. Bake for 18-22 minutes, until internal temperature reaches 145°F (63°C) and the crust is deep golden brown. For extra crunch, broil for 1-2 minutes at the end, watching closely.
  6. Let rest on the wire rack for 5 minutes. Garnish with parsley and lemon wedges before serving.

Notes
