Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with foil and place a wire rack on top.
  2. Pat the chicken thighs dry with paper towels to ensure crispiness.
  3. Rub the chicken thighs all over with olive oil. Season generously with salt, black pepper, garlic powder, and paprika.
  4. Arrange the chicken thighs skin-side up on the wire rack, spacing them out for air circulation.
  5. Bake in the preheated oven for 30 minutes until the skin is golden and starting to crisp.
  6. While the chicken bakes, whisk together honey, Dijon mustard, whole grain mustard, apple cider vinegar, and smoked paprika or cayenne if using.
  7. After 30 minutes, brush the honey mustard glaze generously over the chicken thighs.
  8. Return to the oven and bake for an additional 10-15 minutes until the glaze is bubbly and caramelized and the internal temperature reaches 165°F (74°C).
  9. Let the chicken rest for 5 minutes before serving to allow juices to redistribute.
