  • 1 ½ pounds boneless, skinless chicken breasts (or thighs)
  • 2 cans (15 oz each) white beans, drained and rinsed (cannellini or great northern)
  • 1 can (15 oz) sweet corn, drained (or 1 ½ cups frozen corn)
  • 1 can (4 oz) diced green chiles (mild or medium)
  • 4 cups low-sodium chicken broth
  • 1 block (8 oz) cream cheese, softened and cut into cubes
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon dried oregano
  • ½ teaspoon salt (plus more to taste)
  • ¼ teaspoon black pepper
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for garnish)
  • Shredded Monterey Jack cheese (for garnish)
  • Sour cream or Greek yogurt (for garnish)
  • Tortilla chips or strips (for garnish)
  • Diced avocado (for garnish)

Instructions

  1. Prep your ingredients: Drain and rinse both cans of white beans. Drain the can of corn. Cut the cream cheese into cubes. Open the can of green chiles. Measure out your spices.
  2. Layer everything in the slow cooker: Place the chicken breasts at the bottom. Add the drained white beans, corn, and diced green chiles on top.
  3. Add the seasonings and broth: Sprinkle the cumin, garlic powder, onion powder, oregano, salt, and pepper over everything. Pour in the chicken broth, making sure the chicken is mostly covered. Do not stir.
  4. Add the cream cheese: Place the cubed cream cheese on top of the liquid. It will float initially.
  5. Cook low and slow: Cover and cook on LOW for 4 to 5 hours, or on HIGH for 2 to 3 hours, until the chicken is tender and shreddable.
  6. Shred the chicken: Remove the chicken to a cutting board and shred with two forks.
  7. Stir and finish: Return the shredded chicken to the slow cooker. Stir well to incorporate the cream cheese. Taste and adjust seasoning, adding a squeeze of fresh lime juice if desired.
  8. Let it rest: Turn the slow cooker to WARM and let the chili sit for 10 to 15 minutes before serving.

Notes

For best results, use full-fat cream cheese and soften it before adding. If the chili is too thick, stir in a splash of chicken broth. This chili tastes even better the next day. To freeze, cool completely and store in freezer-safe containers for up to 3 months.
