A flavorful and easy-to-make Mexican street corn recipe featuring smoky grilled corn coated in a creamy, spicy, tangy sauce with cotija cheese and lime.

- 4 ears fresh corn on the cob, husked
- 1/2 cup mayonnaise
- 1/2 cup cotija cheese, crumbled
- 2 tablespoons fresh lime juice (about 1 lime)
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 2 tablespoons fresh cilantro, finely chopped (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 2 tablespoons unsalted butter, melted
- Optional: a few dashes of hot sauce
Instructions
- Preheat your grill or grill pan to medium-high heat, around 400°F (200°C), about 5-7 minutes.
- Husk the corn and remove all silk. Trim any excess stalks so the corn sits flat.
- Brush each ear of corn evenly with melted butter using a basting brush.
- Grill the corn for 10-12 minutes, turning every 2-3 minutes until char marks appear and kernels are tender. Watch closely to avoid burning.
- While the corn grills, combine mayonnaise, cotija cheese, lime juice, chili powder, garlic powder, salt, and black pepper in a mixing bowl. Mix until smooth and well blended. Add hot sauce if desired.
- Once the corn is done, use a spoon or spreader to generously coat each ear with the creamy sauce while still warm.
- Sprinkle chopped cilantro on top for garnish.
- Serve immediately for best taste and texture.
Notes
If the sauce is too thick, add a teaspoon of lime juice or a splash of water to loosen it. Grilling corn with husks on (soaked in water) creates juicier kernels but reduces char. Use a spoon to apply sauce for better coating and less mess. For dairy-free, substitute vegan mayo and dairy-free cheese or omit cheese.
