- 4 bone-in pork chops (about 1-inch thick)
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 4–5 cloves garlic, freshly minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Season the pork chops generously with salt and pepper on both sides.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once hot, add the pork chops and sear for 3-4 minutes per side, until golden brown. Remove from the skillet and set aside.
- Lower the heat to medium and add 2 tablespoons of butter to the same skillet. Once melted, add the minced garlic and sauté for 1-2 minutes until fragrant (but don’t let it burn!).
- Pour in the chicken broth and whisk to deglaze the pan, scraping up any browned bits from the bottom.
- Stir in the heavy cream and bring the sauce to a gentle simmer. Let it cook for 2-3 minutes, stirring occasionally, until slightly thickened.
- Whisk in the grated Parmesan cheese until fully melted and incorporated. Taste the sauce and adjust seasoning with salt and pepper if needed.
- Return the pork chops to the skillet, spooning the sauce over them. Cover and let them simmer in the sauce for 5-6 minutes, or until cooked through (internal temperature should reach 145°F/63°C).
- Garnish with freshly chopped parsley and serve immediately.
