  • 4 bone-in pork chops (about 1-inch thick)
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 45 cloves garlic, freshly minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the pork chops generously with salt and pepper on both sides.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once hot, add the pork chops and sear for 3-4 minutes per side, until golden brown. Remove from the skillet and set aside.
  3. Lower the heat to medium and add 2 tablespoons of butter to the same skillet. Once melted, add the minced garlic and sauté for 1-2 minutes until fragrant (but don’t let it burn!).
  4. Pour in the chicken broth and whisk to deglaze the pan, scraping up any browned bits from the bottom.
  5. Stir in the heavy cream and bring the sauce to a gentle simmer. Let it cook for 2-3 minutes, stirring occasionally, until slightly thickened.
  6. Whisk in the grated Parmesan cheese until fully melted and incorporated. Taste the sauce and adjust seasoning with salt and pepper if needed.
  7. Return the pork chops to the skillet, spooning the sauce over them. Cover and let them simmer in the sauce for 5-6 minutes, or until cooked through (internal temperature should reach 145°F/63°C).
  8. Garnish with freshly chopped parsley and serve immediately.
