  • 1 small green bell pepper, finely diced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 8 ounces cream cheese, softened
  • 1 cup sour cream (full-fat recommended)
  • 1 cup shredded provolone cheese
  • 1 cup shredded mozzarella cheese
  • 3–4 pepperoncini peppers, chopped
  • 2 tablespoons pepperoncini juice (optional)
  • Salt and pepper to taste

Instructions

  1. Finely dice the green bell pepper and onion. Mince the garlic cloves. Slice the deli roast beef into bite-sized pieces if not pre-sliced thin already.
  2. Optional: In a skillet over medium heat, lightly sauté the diced onions, bell pepper, and garlic with a teaspoon of oil until softened and fragrant.
  3. In a mixing bowl, blend the softened cream cheese and sour cream until smooth. Stir in ¾ cup of the provolone and mozzarella cheeses, reserving the rest for topping. Add salt and pepper to taste.
  4. Add the sautéed veggies (or raw if you skipped sautéing) and chopped roast beef to the slow cooker. Pour the creamy cheese mixture over the top. Mix gently to combine everything evenly.
  5. Stir in chopped pepperoncini peppers and their juice if using.
  6. Cover and cook on low for 2-3 hours. Check occasionally to stir gently, ensuring the cheese melts uniformly and beef stays tender.
  7. Sprinkle remaining shredded cheeses on top in the last 15 minutes of cooking for a melty, appealing finish.
  8. Serve warm with sturdy chips, sliced baguette, or veggies.

Notes

Let cream cheese come to room temperature before mixing to avoid lumps. Sautéing the veggies is optional but enhances flavor. Stir occasionally during cooking to prevent cheese from sticking. Add a splash of milk or beef broth if dip thickens too much. Use freshly grated cheese for best melt quality.
