Ingredients
Scale
- 6 cups whole milk
- 2 cups heavy cream
- 2 cups semi-sweet chocolate chips
- 1 cup milk chocolate chips
- 1/2 cup granulated sugar
- 2 teaspoons vanilla extract
- 1 1/2 teaspoons peppermint extract
- 1/4 teaspoon salt
- Whipped cream (for serving)
- Crushed candy canes or peppermint candies (for serving)
- Chocolate shavings or sprinkles (for serving)
- Mini marshmallows (for serving)
Instructions
- Prepare your slow cooker. Give the ceramic insert a quick rinse and dry it. If you’re worried about sticking, you can spray it lightly with non-stick cooking spray.
- Add the milk and cream. Pour 6 cups of whole milk and 2 cups of heavy cream into the slow cooker. Give it a quick stir to combine.
- Add the chocolate chips. Dump in 2 cups of semi-sweet chocolate chips and 1 cup of milk chocolate chips. Don’t stir yet.
- Add the sugar and salt. Sprinkle 1/2 cup of granulated sugar and 1/4 teaspoon of salt evenly over the top.
- Set the slow cooker to low. Cover it with the lid and let it cook for 1 1/2 to 2 hours. Resist the urge to lift the lid.
- Whisk everything together. After 1 1/2 hours, remove the lid and give the mixture a good whisk until smooth and glossy.
- Add the vanilla and peppermint extracts. Stir in 2 teaspoons of vanilla extract and 1 1/2 teaspoons of peppermint extract. Taste and adjust if needed.
- Switch to warm setting. Turn the slow cooker to the ‘warm’ setting to keep the hot chocolate at the perfect temperature.
- Prepare your toppings. Crush candy canes, whip cream, and set up a topping station.
- Serve and enjoy. Ladle the hot chocolate into mugs and let guests add their own toppings.
Notes
Don’t rush the melting process; use low heat to prevent scorching. Taste as you go with the peppermint extract. Keep the hot chocolate on the ‘warm’ setting to avoid curdling. This recipe can be made a day ahead and reheated.
