Description

Ingredients

  • 1.5 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons unsalted butter or olive oil
  • 3 cloves fresh minced garlic
  • 4 cups low-sodium chicken broth
  • 12 ounces fettuccine pasta, broken in half (or penne or rigatoni)
  • 1 cup heavy cream
  • 4 ounces softened cream cheese
  • 1 cup freshly grated Parmesan cheese
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. Cut chicken breasts into bite-sized pieces and pat dry with paper towels.
  2. Turn on pressure cooker’s sauté setting. Add butter or olive oil and melt.
  3. Add minced garlic and cook for about 30 seconds until fragrant.
  4. Add chicken pieces, season with salt and pepper, and sauté for 4-5 minutes until browned but not fully cooked.
  5. Pour in chicken broth, scraping the bottom of the pot to loosen browned bits.
  6. Layer broken pasta evenly over the chicken without stirring.
  7. Seal the lid and set pressure cooker to high pressure for 6 minutes.
  8. Perform a quick release when cooking ends.
  9. Open lid carefully and stir in heavy cream and softened cream cheese until smooth.
  10. Fold in grated Parmesan cheese and adjust seasoning with salt and pepper.
  11. Turn sauté setting back on and simmer for 2-3 minutes, stirring frequently to thicken sauce.
  12. Remove from heat, garnish with chopped parsley, and serve immediately.

Notes

Do not stir pasta before cooking to prevent clumping. Use fresh garlic for best flavor. Quick-release pressure to avoid overcooking pasta. If sauce is too thick, add chicken broth or cream; if too thin, simmer longer on sauté mode. For dairy-free, substitute coconut cream and dairy-free cream cheese with nutritional yeast instead of Parmesan.
