- 1.5 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons unsalted butter or olive oil
- 3 cloves fresh minced garlic
- 4 cups low-sodium chicken broth
- 12 ounces fettuccine pasta, broken in half (or penne or rigatoni)
- 1 cup heavy cream
- 4 ounces softened cream cheese
- 1 cup freshly grated Parmesan cheese
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- Cut chicken breasts into bite-sized pieces and pat dry with paper towels.
- Turn on pressure cooker’s sauté setting. Add butter or olive oil and melt.
- Add minced garlic and cook for about 30 seconds until fragrant.
- Add chicken pieces, season with salt and pepper, and sauté for 4-5 minutes until browned but not fully cooked.
- Pour in chicken broth, scraping the bottom of the pot to loosen browned bits.
- Layer broken pasta evenly over the chicken without stirring.
- Seal the lid and set pressure cooker to high pressure for 6 minutes.
- Perform a quick release when cooking ends.
- Open lid carefully and stir in heavy cream and softened cream cheese until smooth.
- Fold in grated Parmesan cheese and adjust seasoning with salt and pepper.
- Turn sauté setting back on and simmer for 2-3 minutes, stirring frequently to thicken sauce.
- Remove from heat, garnish with chopped parsley, and serve immediately.
Notes
Do not stir pasta before cooking to prevent clumping. Use fresh garlic for best flavor. Quick-release pressure to avoid overcooking pasta. If sauce is too thick, add chicken broth or cream; if too thin, simmer longer on sauté mode. For dairy-free, substitute coconut cream and dairy-free cream cheese with nutritional yeast instead of Parmesan.
