These creamy peanut butter overnight oats are a game-changer: thick, rich, and packed with peanut butter flavor in every bite. Ready in just 5 minutes the night before, they make for a perfect grab-and-go breakfast.

- 1 cup (90g) rolled oats
- 1 cup (240ml) milk (any kind)
- 2 tablespoons (32g) creamy peanut butter
- 1 tablespoon (12g) chia seeds
- 1 tablespoon (15ml) maple syrup
- 1/2 teaspoon vanilla extract
- 1/8 teaspoon salt
- Optional toppings: sliced banana, extra peanut butter, dark chocolate chips, chopped peanuts, cinnamon
Instructions
- In a small bowl or liquid measuring cup, whisk together 1 cup milk and 2 tablespoons creamy peanut butter until smooth and fully combined.
- Add 1 tablespoon maple syrup, 1/2 teaspoon vanilla extract, and a pinch of salt. Whisk again to combine.
- In a mason jar or airtight container, combine 1 cup rolled oats and 1 tablespoon chia seeds. Stir to distribute chia seeds evenly.
- Pour the peanut butter milk mixture over the dry ingredients. Use a spatula to scrape every last drop.
- Stir thoroughly until all oats are submerged and chia seeds are evenly distributed. The mixture will look thin.
- Seal the container and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
- The next morning, stir the oats. If too thick, add a splash of milk (1-2 tablespoons). Add desired toppings and enjoy.
Notes
For best texture, use rolled oats (not quick or steel-cut). Whisk peanut butter into milk first to avoid clumps. If using unsweetened almond milk, add an extra teaspoon of maple syrup. Oats keep in the fridge for up to 5 days; add a splash of milk on later days to loosen. Do not freeze.
