Ingredients
Scale
- 1/2 cup rolled oats
- 1/2 cup milk of choice (whole milk, oat milk, or almond milk)
- 2 tablespoons creamy peanut butter (natural preferred)
- 1 tablespoon unsweetened cocoa powder (Dutch-process or regular)
- 1 tablespoon maple syrup or honey
- 1 tablespoon chia seeds
- 1 tablespoon dark chocolate chips (mini chips preferred, 60% cacao or higher)
- Pinch of salt
- 1/2 teaspoon vanilla extract
Instructions
- In a small bowl or liquid measuring cup, combine 1/2 cup milk, 2 tablespoons peanut butter, 1 tablespoon maple syrup, 1/2 teaspoon vanilla extract, and a pinch of salt. Whisk until the peanut butter is fully incorporated and the mixture is smooth (about 30 seconds).
- Sprinkle 1 tablespoon unsweetened cocoa powder over the milk mixture and whisk again until fully combined, forming a thin chocolate milk.
- In a mason jar or airtight container, add 1/2 cup rolled oats and 1 tablespoon chia seeds. Stir to distribute the chia seeds evenly.
- Pour the chocolate-peanut butter milk mixture over the oats and chia seeds. Stir well, scraping the bottom and sides of the jar to ensure all oats are coated.
- Sprinkle 1 tablespoon dark chocolate chips over the top and gently fold them into the mixture.
- Seal the jar and refrigerate for at least 4 hours, but overnight (8-12 hours) is best.
- In the morning, stir the oats well. If too thick, stir in a tablespoon or two of extra milk.
- Optional: Top with a drizzle of extra peanut butter, a sprinkle of sea salt, and more chocolate chips before serving.
Notes
Use old-fashioned rolled oats, not quick or steel-cut. Don’t skip the chia seeds—they create the pudding-like texture. For best results, let the oats sit overnight (8-12 hours). The flavors improve on day two. Store in the refrigerator for up to 5 days. Do not freeze.
