Ingredients

  • ½ cup (50g) rolled oats
  • 1 cup (240ml) milk of choice (whole milk recommended)
  • 2 tablespoons (32g) creamy peanut butter (natural, no added sugar)
  • 1 medium ripe banana, sliced
  • 1 scoop (about 30g) vanilla protein powder (whey or plant-based)
  • Pinch of salt
  • 1 teaspoon maple syrup or honey (optional, if banana isn’t very ripe)
  • Optional toppings: extra banana slices, drizzle of peanut butter, chia seeds, dark chocolate chips

Instructions

  1. In a medium saucepan, combine the rolled oats and milk. Place over medium heat and bring to a gentle simmer, about 3-4 minutes.
  2. Reduce heat to medium-low and stir frequently. Cook for about 5 minutes until oats are tender and mixture is creamy but still slightly loose.
  3. Mash half of the sliced banana with a fork and stir into the oats. Cook for another minute, stirring constantly.
  4. Remove the pot from the heat and let it sit for 30 seconds to cool slightly.
  5. Sprinkle the vanilla protein powder over the oats and stir in quickly but gently until fully incorporated. If too thick, add a splash of warm milk.
  6. Add the peanut butter and stir until melted and swirled throughout.
  7. Stir in the pinch of salt.
  8. Pour into a bowl and top with remaining banana slices, extra peanut butter drizzle, and any other desired toppings.
  9. Serve immediately for best texture.

Notes

For best texture, add protein powder after removing oats from heat. Use room temperature milk for even cooking. Toasting oats before adding liquid adds a nutty flavor. If oats are too thick after adding protein powder, add warm milk a tablespoon at a time. Leftovers keep in the fridge for up to 4 days; reheat with a splash of milk.
