These creamy overnight pumpkin pie oats are a quick and easy meal prep breakfast that tastes like dessert. With just five minutes of prep, you’ll have delicious, pumpkin-spiced oats ready for the whole week.

- 2 cups (180g) old-fashioned rolled oats
- 1 cup (240g) pumpkin puree
- 1 ½ cups (360ml) milk of choice
- ½ cup (120g) plain Greek yogurt
- 3–4 tablespoons (45-60ml) pure maple syrup
- 2 teaspoons pumpkin pie spice
- 1 teaspoon vanilla extract
- 2 tablespoons chia seeds
- ¼ teaspoon salt
- Optional toppings: chopped pecans, toasted walnuts, extra maple syrup, whipped cream, cinnamon sugar
Instructions
- In a medium bowl or large liquid measuring cup, whisk together the pumpkin puree, milk, Greek yogurt, maple syrup, and vanilla extract until smooth and uniform.
- Add the rolled oats, pumpkin pie spice, chia seeds, and salt. Stir until all oats are coated.
- Taste and adjust sweetness or spice as desired.
- Divide the mixture evenly among 4-5 mason jars or airtight containers, leaving about ½ inch of space at the top.
- Seal the jars and refrigerate for at least 6 hours, preferably overnight.
- Before serving, stir the oats, add desired toppings, and enjoy cold or warm.
Notes
For best texture, use old-fashioned rolled oats, not quick or steel-cut. Chia seeds are optional but help thicken the oats. The oats keep in the fridge for up to 5 days and taste best on days 2-4. To serve warm, microwave a portion for 45-60 seconds with a splash of milk.
