  • 2 tablespoons (20g) chia seeds
  • 12 tablespoons (15-30ml) maple syrup or honey
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Combine the dry ingredients: In a mixing bowl or jar, add 1 cup rolled oats, 2 tablespoons chia seeds, and 1 scoop protein powder. Whisk together until evenly distributed.
  2. Add the wet ingredients: Pour in 1 cup milk, ½ cup Greek yogurt, ¼ cup peanut butter, 1-2 tablespoons maple syrup, and 1 teaspoon vanilla extract. Add a pinch of salt.
  3. Stir thoroughly: Use a spoon or whisk to mix everything together until the peanut butter is fully incorporated and no dry pockets remain. The mixture will look thin at this point.
  4. Taste and adjust: Taste the mixture and adjust sweetness or consistency as needed. Add more maple syrup if desired or a splash more milk if too thick.
  5. Portion into jars: Divide the mixture evenly among jars or containers, leaving about an inch of headspace for expansion.
  6. Refrigerate overnight: Place jars in the fridge and let sit for at least 6 hours, but overnight (8 hours) is ideal for the chia seeds to gel and oats to soften.
  7. Enjoy in the morning: Grab a jar, give it a good stir, and add desired toppings. Eat cold or let sit at room temperature for 10 minutes.

Notes

Use room temperature ingredients for easier mixing. Don’t skip the salt—it enhances the peanut butter flavor. If oats are too thick in the morning, stir in a splash of milk.
