Description
A creamy, protein-packed overnight oats recipe with a peanut butter swirl that tastes like comfort food but is healthy enough for a weekday breakfast. Perfect for meal prep and brunch entertaining.
Ingredients
- 1 cup (90g) rolled oats (old-fashioned oats)
- 1 cup (240ml) milk of choice (whole milk, oat milk, or almond milk)
- ½ cup (120g) plain Greek yogurt (full-fat or 2%)
- 2 tablespoons (20g) chia seeds
- 2 tablespoons (30ml) maple syrup or honey
- 1 teaspoon (5ml) vanilla extract
- A pinch of salt
- ¼ cup (60g) creamy peanut butter (natural, no added sugar or oil)
- 1 scoop (about 30g) vanilla or unflavored protein powder (whey or plant-based)
- 2–3 tablespoons (30-45ml) warm water (as needed for swirl)
- Optional toppings: sliced banana, chopped peanuts or almonds, extra peanut butter drizzle, dark chocolate chips or cacao nibs, cinnamon, fresh berries
Instructions
- Combine the dry base ingredients: In a jar or mixing bowl, add 1 cup (90g) of rolled oats, 2 tablespoons (20g) of chia seeds, and a pinch of salt. Stir to distribute evenly.
- Add the wet base ingredients: Pour in 1 cup (240ml) of milk, ½ cup (120g) of Greek yogurt, 2 tablespoons (30ml) of maple syrup, and 1 teaspoon (5ml) of vanilla extract. Stir until oats and chia seeds are evenly coated.
- Make the peanut butter protein swirl: In a separate small bowl, combine ¼ cup (60g) of creamy peanut butter and 1 scoop (about 30g) of protein powder. Add 2 tablespoons (30ml) of warm water and stir vigorously until smooth and slightly runny. Add another tablespoon of warm water if too stiff.
- Layer and swirl: Pour about half of the oat mixture into serving jars or bowls. Spoon half of the peanut butter protein mixture over it and gently swirl with a knife or spoon. Add remaining oat mixture, then top with the rest of the peanut butter swirl and gently swirl again.
- Seal and refrigerate: Cover tightly and refrigerate for at least 6 hours, but overnight (8-12 hours) is ideal.
- Serve and top: In the morning, stir the oats. If too thick, stir in a splash of milk. Portion into bowls and add desired toppings. Serve cold or at room temperature.
Notes
Don’t skip the chia seeds—they are essential for the thick, pudding-like texture. Use room temperature ingredients if possible for more even absorption. If using salted peanut butter, reduce or skip the added salt. The oats keep in the refrigerator for up to 5 days and can be frozen for up to 3 months. For a warm version, microwave for 45-60 seconds.
