Description

These creamy overnight peanut butter banana oats are a no-cook, grab-and-go breakfast made with simple pantry staples. Naturally sweetened with ripe banana and packed with protein and fiber, they’re perfect for busy mornings.


Ingredients

  • 1 cup rolled oats (old-fashioned oats)
  • 1 ripe banana
  • 2 tablespoons creamy peanut butter
  • 1/2 cup milk of choice (2% milk recommended)
  • 1/4 cup plain Greek yogurt (optional)
  • 1 tablespoon chia seeds
  • 1 teaspoon maple syrup or honey (optional)
  • 1/2 teaspoon vanilla extract
  • Pinch of fine sea salt

Instructions

  1. In a small mixing bowl, mash the ripe banana with a fork or potato masher until mostly smooth with a few small lumps.
  2. Add the milk, peanut butter, Greek yogurt (if using), vanilla extract, and maple syrup (if using) to the mashed banana. Whisk or stir until well combined and the peanut butter is fully incorporated.
  3. Stir in the rolled oats, chia seeds, and a pinch of salt until all oats are coated. The mixture will look loose.
  4. Divide the mixture evenly between two 16-ounce mason jars or one large airtight container.
  5. Seal the jars and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  6. In the morning, stir the oats. If too thick, add a splash of milk. Serve cold or microwave for 30-45 seconds for warm oats. Top with sliced banana, a drizzle of peanut butter, chia seeds, or dark chocolate chips if desired.

Notes

For best texture, use rolled oats (not quick or steel-cut). The oats will continue to thicken as they sit; add a splash of milk on days 4-5 if needed. Do not freeze. For a vegan version, use plant-based milk and dairy-free yogurt. For gluten-free, use certified gluten-free rolled oats.
