A quick and easy overnight oats recipe that comes together in just five minutes of prep. Creamy, satisfying, and endlessly customizable, this breakfast is perfect for busy mornings and will keep you full for hours.
Ingredients
- 1 cup (100g) rolled oats
- 2 tablespoons (24g) chia seeds
- 3 tablespoons (48g) creamy almond butter
- 1 cup (240ml) milk of choice (e.g., oat milk, whole milk)
- 1–2 tablespoons (15-30ml) pure maple syrup
- 1/2 teaspoon vanilla extract
- 1/8 teaspoon sea salt
- Optional toppings: sliced bananas, fresh berries, extra almond butter, chopped almonds, cinnamon, Greek yogurt
Instructions
- In a jar or container, combine 1 cup rolled oats, 2 tablespoons chia seeds, and a pinch of salt. Stir with a fork to distribute evenly.
- Add 1 cup milk, 3 tablespoons almond butter, 1-2 tablespoons maple syrup, and 1/2 teaspoon vanilla extract.
- Stir vigorously for 30-45 seconds until almond butter is fully incorporated and no streaks remain.
- Taste and adjust sweetness or saltiness if needed.
- Seal the jar and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
- In the morning, stir the oats. If too thick, add a splash of milk. Serve cold or microwave for 45-60 seconds for a warm breakfast. Add desired toppings and enjoy.
Notes
For best texture, use rolled oats (not quick or steel-cut). Stir thoroughly to avoid clumps. Oats are best within 3 days; add extra milk if making for later in the week. Almond butter should be at room temperature for easier mixing. For a nut-free version, substitute sunflower seed butter or tahini.
