- 12 ounces penne or rigatoni pasta
- 2 cups cherry tomatoes, halved

- 1 small yellow or white onion, finely chopped
- 3 cups low sodium chicken broth
- 1 cup heavy cream
- ½ cup freshly grated Parmesan cheese
- A handful fresh basil, torn

Instructions
- Preheat oven to 425°F (220°C). Toss halved cherry tomatoes with 1 tablespoon olive oil, salt, and pepper. Spread cut-side up on a baking sheet or oven-safe skillet. Roast for 20-25 minutes until soft, caramelized, and blistered.
- While tomatoes roast, heat remaining 1 tablespoon olive oil over medium-high heat in a large skillet. Add sausage, breaking it up with a spoon. Cook 5-7 minutes until browned and cooked through. Remove sausage and set aside, leaving rendered fat in pan.
- In the same pan, add chopped onion and cook until translucent, about 3-4 minutes. Add minced garlic and cook 30 seconds until fragrant, careful not to burn.
- Add dry pasta and chicken broth to the pan. Stir well and bring to a boil. Reduce heat to simmer, cover, and cook 12-15 minutes, stirring occasionally to prevent sticking, until pasta absorbs most broth.
- When pasta is nearly cooked, stir in cooked sausage and roasted tomatoes with their juices. Heat through for 2-3 minutes.
- Pour in heavy cream and sprinkle Parmesan cheese over the top. Stir gently until sauce thickens and coats pasta, about 2-3 minutes. Adjust seasoning with salt and pepper.
- Tear fresh basil leaves and stir in just before serving for a bright, herbal note.
