Ingredients
- 6 bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter
- 6 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and black pepper to taste
- ¼ teaspoon red pepper flakes (optional)
- 2 tablespoons fresh parsley, chopped
Instructions
- Pat the chicken thighs completely dry with paper towels. Season both sides generously with salt and black pepper.
- Heat olive oil in a large skillet over medium-high heat until shimmering. Place chicken thighs skin-side down in the hot oil. Cook undisturbed for 5-6 minutes until deep golden brown and crispy. Flip and cook for another 4-5 minutes. Transfer to a plate.
- Reduce heat to medium. Add butter to the pan and let it melt. Add minced garlic and stir constantly for about 30 seconds until fragrant.
- Pour in chicken broth and use a wooden spoon to scrape up browned bits from the bottom of the pan. Let it come to a simmer.
- Return chicken thighs to the skillet, skin-side up. Sprinkle Italian seasoning evenly over the chicken. Reduce heat to medium-low, cover, and simmer for 12-15 minutes until chicken is cooked through (165°F internal temperature).
- Carefully remove lid and transfer chicken to a plate. Reduce heat to low. Pour in heavy cream and add grated Parmesan cheese. Whisk gently until cheese is melted and sauce is smooth. Season with salt, pepper, and red pepper flakes if using.
- Return chicken to the skillet, spooning sauce over the tops. Warm through for about 1 minute. Garnish with fresh parsley and serve immediately.

For best results, use bone-in, skin-on chicken thighs and freshly grated Parmesan cheese. Do not skip searing the chicken—it builds flavor. Keep heat low when adding cream and cheese to prevent curdling. Leftovers can be stored in the refrigerator for up to 4 days. Reheat gently on the stovetop with a splash of broth or milk.
