  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon Cajun seasoning, plus more to taste
  • Salt and pepper to taste
  • 1 tablespoon olive oil, plus 1 teaspoon if needed
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 8 ounces uncooked fettuccine, broken in half
  • 1 cup freshly grated Parmesan cheese
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Toss the chicken pieces with 1 tablespoon Cajun seasoning, salt, and pepper until well coated.
  2. Heat 1 tablespoon olive oil over medium-high heat in a large deep skillet or wide pot. Add the chicken in a single layer and cook for 5-7 minutes until golden brown on all sides but not fully cooked through. Remove chicken and set aside.
  3. Add another teaspoon of olive oil if needed, then sauté the minced garlic in the same pan for 1-2 minutes until fragrant but not browned.
  4. Pour in the chicken broth and heavy cream, stirring to combine. Bring to a simmer.
  5. Add the broken fettuccine noodles, pressing them gently into the liquid so they are mostly submerged. Cover with a lid and let simmer for about 8-10 minutes, stirring every few minutes to prevent sticking and ensure even cooking.
  6. Return the chicken to the pan along with the remaining Cajun seasoning. Stir and cook for about 5 minutes until the chicken is fully cooked and the sauce thickens slightly.
  7. Remove the pan from heat and stir in the grated Parmesan cheese until melted and smooth. Taste and adjust salt and pepper as needed.
  8. Garnish with chopped fresh parsley and serve immediately while creamy and warm.

Notes

If the sauce becomes too thick before the pasta is cooked, add a splash of broth or cream to loosen it. Stir gently after adding cheese to maintain a silky texture. For gluten-free, use gluten-free pasta and verify Cajun seasoning is gluten-free. For dairy-free, substitute heavy cream with full-fat coconut milk and Parmesan with a dairy-free cheese alternative.
