  • 1/2 cup sun-dried tomatoes (packed in oil), drained and chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth (low-sodium preferred)
  • 1/2 cup freshly grated Parmesan cheese (Parmigiano-Reggiano recommended)
  • 4 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides generously with salt, pepper, and dried oregano. Let sit at room temperature for about 10 minutes.
  2. Place a large skillet over medium-high heat. Add the butter and olive oil together. Swirl until the butter is melted and foamy.
  3. Carefully place the chicken breasts in the hot skillet. Cook undisturbed for 5-6 minutes until the bottom is golden brown and releases easily. Flip and cook another 4-5 minutes until the internal temperature reaches 165°F. Transfer chicken to a plate and tent loosely with foil.
  4. Reduce heat to medium. Add the minced garlic to the pan and stir constantly for about 30 seconds until fragrant. Scrape up any browned bits from the bottom of the pan.
  5. Pour in the chicken broth and deglaze the pan completely. Let simmer for about 2 minutes until reduced by half. Pour in the heavy cream and stir in the chopped sun-dried tomatoes. Add red pepper flakes if using. Bring to a gentle simmer.
  6. Let the sauce simmer for 3-4 minutes, stirring occasionally, until it coats the back of a spoon. Stir in the freshly grated Parmesan cheese until fully melted and smooth. Taste and adjust salt and pepper.
  7. Nestle the chicken breasts back into the skillet, spooning some sauce over each piece. Reduce heat to low, cover, and let simmer together for 5 minutes.
  8. Remove from heat and let rest for 2-3 minutes. Garnish with fresh basil or parsley before serving.

Notes

For best results, let the sun-dried tomatoes simmer in the cream for at least 3-4 minutes to release their flavor. Grate your own Parmesan for a smooth sauce. If the sauce is too thin, stir in a cornstarch slurry (1 teaspoon cornstarch mixed with 2 teaspoons cold water) and simmer for a minute. Leftovers taste even better the next day.
