A comforting and easy weeknight meal featuring tender chicken breasts in a rich, creamy sun-dried tomato sauce with garlic and herbs. Ready in about 30 minutes, this dish is perfect for cozy dinners and crowd-pleasers.
Ingredients
- 1.5 pounds boneless, skinless chicken breasts, pounded slightly for even cooking
- 2 tablespoons olive oil (extra virgin preferred)
- 3–4 garlic cloves, minced
- 1/3 cup (50g) sun-dried tomatoes, chopped (oil-packed recommended)
- 1 cup (240ml) low-sodium chicken broth
- 1 cup (240ml) heavy cream
- 1/2 cup (50g) freshly grated Parmesan cheese
- 1 teaspoon dried Italian herbs (basil, oregano, thyme mix)
- Pinch of red pepper flakes (optional)
- Salt and black pepper to taste
- Fresh basil or parsley, chopped for garnish (optional)
Instructions
- Pat chicken breasts dry and lightly pound to about 3/4 inch thickness. Season both sides with salt and pepper.
- Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add chicken breasts and sear without moving for 4-5 minutes per side until golden brown and cooked through (internal temperature 165°F). Remove chicken and set aside.
- Lower heat to medium. Add another tablespoon olive oil if needed. Sauté minced garlic and chopped sun-dried tomatoes for 1-2 minutes until fragrant.
- Deglaze the pan with 1 cup low-sodium chicken broth, scraping browned bits from the bottom.
- Slowly stir in heavy cream and Parmesan cheese. Add dried Italian herbs and red pepper flakes if using. Simmer gently for 5-7 minutes until sauce thickens and coats the back of a spoon. Add broth or cream if sauce thickens too much.
- Return chicken breasts to the sauce, spoon sauce over them, and heat together for 2-3 minutes to marry flavors.
- Taste and adjust seasoning with salt and pepper. Garnish with chopped fresh basil or parsley before serving.
Notes
Use oil-packed sun-dried tomatoes for best flavor; rehydrate dry-packed tomatoes in warm water for 10 minutes if needed. Avoid moving chicken too soon when searing to develop a golden crust. Lower heat when adding cream to prevent curdling. Can substitute heavy cream with coconut milk and Parmesan with nutritional yeast for dairy-free version. Chicken thighs can be used with adjusted cooking time.
