Instructions

  1. In a medium saucepan, combine 2 cups heavy cream and ⅔ cup granulated sugar. Warm over medium heat, stirring frequently with a whisk until the sugar dissolves completely and the mixture just starts to simmer (about 5 minutes). Avoid boiling.
  2. Remove from heat. Stir in the zest and juice of 2 large lemons and 2 tablespoons unsalted butter. Whisk gently until butter melts and mixture thickens slightly.
  3. Pour the lemon posset through a fine mesh sieve into a clean bowl or serving cups to ensure a silky texture.
  4. Cover and refrigerate for at least 4 hours or overnight until set and creamy.
  5. While posset chills, cream ½ cup softened unsalted butter with ¼ cup powdered sugar until light and fluffy. Add 1 cup all-purpose flour, ½ teaspoon vanilla extract, and a pinch of salt. Mix until smooth dough forms. Add a teaspoon of cold water if dough is too crumbly.
  6. Roll dough on a lightly floured surface to ¼ inch thickness. Cut into finger-sized strips or small rectangles.
  7. Place on a parchment-lined baking sheet and bake at 325°F (165°C) for 15-18 minutes until edges are golden. Cool completely on a wire rack.
