Ingredients
- 2 cups (480 ml) heavy cream
- 2/3 cup (135 g) granulated sugar
- Zest of 2 large fresh lemons
- 1/4 cup (60 ml) fresh lemon juice
- 1 cup (150 g) mixed fresh berries (raspberries, blueberries, sliced strawberries)
- 1/2 teaspoon vanilla extract (optional)
Instructions
- Pour 2 cups (480 ml) of heavy cream and 2/3 cup (135 g) granulated sugar into a medium saucepan. Warm over medium heat, stirring occasionally, until the sugar dissolves and the cream just starts to simmer—not a full boil, about 5-7 minutes.
- Remove the pan from heat and immediately stir in the zest of 2 large lemons and 1/4 cup (60 ml) fresh lemon juice. Add 1/2 teaspoon vanilla extract if using. The mixture will thicken slightly as the citrus interacts with the cream.
- Divide the mixture evenly (about 4-5 oz or 120-140 ml each) into prepared glass ramekins or small serving jars. Let them cool for about 15 minutes at room temperature before transferring to the fridge.
- Cover loosely with plastic wrap and refrigerate for at least 4 hours or overnight until set into a silky, custard-like texture.
- Just before serving, top each posset with a generous handful of fresh berries.
