  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Pour 2 cups (480 ml) of heavy cream and 2/3 cup (135 g) granulated sugar into a medium saucepan. Warm over medium heat, stirring occasionally, until the sugar dissolves and the cream just starts to simmer—not a full boil, about 5-7 minutes.
  2. Remove the pan from heat and immediately stir in the zest of 2 large lemons and 1/4 cup (60 ml) fresh lemon juice. Add 1/2 teaspoon vanilla extract if using. The mixture will thicken slightly as the citrus interacts with the cream.
  3. Divide the mixture evenly (about 4-5 oz or 120-140 ml each) into prepared glass ramekins or small serving jars. Let them cool for about 15 minutes at room temperature before transferring to the fridge.
  4. Cover loosely with plastic wrap and refrigerate for at least 4 hours or overnight until set into a silky, custard-like texture.
  5. Just before serving, top each posset with a generous handful of fresh berries.
