  • 1 cup rolled oats (old-fashioned oats)
  • ½ cup pumpkin purée (100% pumpkin, not pie filling)
  • ½ cup plain Greek yogurt (full-fat or 2%)
  • ¾ cup milk of choice (whole milk recommended)
  • 1 scoop vanilla protein powder (about 30g, optional)
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. Combine the dry ingredients: In a medium mixing bowl or directly in your jar, add 1 cup rolled oats, 1 scoop vanilla protein powder, 1 teaspoon pumpkin pie spice, and a pinch of salt. Whisk or stir to break up any clumps.
  2. Add the wet ingredients: Pour in ½ cup pumpkin purée, ½ cup Greek yogurt, ¾ cup milk, 2 tablespoons maple syrup, and 1 teaspoon vanilla extract. Stir everything together until fully combined. The mixture will look a little loose and soupy at this point — that’s normal.
  3. Mix thoroughly: Spend a good 30 seconds stirring to make sure the pumpkin and yogurt are evenly distributed. Use a small whisk to break up any yogurt clumps. You want a uniform, creamy orange mixture.
  4. Divide into jars: If you mixed in a bowl, divide the oat mixture evenly among your jars. Use four 8-ounce jars for single servings or two 16-ounce jars for larger portions. Leave about ½ inch of headspace at the top.
  5. Seal and refrigerate: Put the lids on tightly and place the jars in the refrigerator. Let them sit for at least 6 hours, but overnight is best.
  6. Serve cold or warm: In the morning, give the oats a good stir. If too thick, stir in a splash of milk. Eat cold straight from the jar, or microwave for 45-60 seconds if you prefer warm oats. Top with your favorite additions.

Notes

The oats will continue to thicken over time; by day three they are very thick. Add a splash of milk before serving if desired. For best texture, use rolled oats, not quick oats. Protein powder is optional but recommended for high protein. If skipping protein powder, add an extra 2 tablespoons of oats.
